Ham & Cheese Soup

This is a "family favorite" around my house. It is a great way to use up leftover ham or veggies from a vegetable tray. I have even added chopped broccoli & cauliflower. To speed up prep time, use a food processor to chop the veggies and the ham.

• Cook Time: 15 mins

Ingredients:

Serves: 8-10

Yield: 8.0 bowls

• 1 cup onion , chopped
• ½ cup celery , chopped
• ½ cup carrot , chopped
• ¼ cup parsley
• 2 cloves garlic , minced
• ¼ cup butter
• ¼ cup flour
• 1 tablespoon ground mustard
• 1⁄8; teaspoon pepper
• 1 cup ham , chopped
• 2 ½ cups chicken broth
• 2 cups milk
• ¾ lb cheddar cheese

Directions:

1. In a large saucepan over medium heat; saute onion, celery, carrots, parsley and garlic in butter for 5 minutes.
2. Stir in flour, ground mustard, and pepper.
3. Add ham and cook for 1 minute stirring constantly.
4. Gradually add broth and milk; bring to a boil.
5. Cook and stir for 2 minutes.
6. Stir in cheese; reduce heat.
7. Cook and stir till cheese is melted.
8. DO NOT BOIL.

Really comforting and yummy. I added some leftover mashed potato, just cause I had it around, and it was thick and flavourful. Everyone in my family liked it.
