  • Preheat oven to 400°F.
  • Prepare pasta dinner as directed on package, with butter or margarine and milk.
  • Place in a 2 quart casserole.
  • Heat olive oil in large frypan, add chopped onion and sliced mushrooms, sauté till onions are just turning brown, 5 minutes.
  • Add ground chicken, pepper and scramble fry with onions and mushrooms turning often until no longer pink, 5 to 8 minutes.
  • Add stewed tomatoes, simmer for 3 or 4 minutes.
  • Add chicken/tomato mixture to casserole.
  • Stir to mix with pasta.
  • Add chopped basil, turn several times to distribute through casserole.
  • Sprinkle Parmesan cheese over top of casserole and bread crumbs if using.
  • Bake uncovered for 20 to 25 minutes, until bubbling around edges and Parmesan is melted and crisp.
  • VARIATION:

  • Use chopped veggies, any that you have and a half pound of very lean hamburger.

  1. We loved this. I used ground turkey and Mike didn't even notice, had he, he would have complained but intead, he raved. I also used fresh mushrooms, added 2 cloves of garlic and used an Italian seasoning blend rather than just the basil. I topped with Italian bread crumbs and left off the parm cheese. Also, rather than using milk I used sour cream for the mac and cheese. I just like it better for casseroles. Wont change a thing next time, and there will be many next times. Thanks for a great recipe. Goes nicely with the classic 'wedge' salad.
     
  2. I found this better than the macaroni one pot type meal that I usually make. The baking helps to meld the flavors. I used ground turkey instead of chicken.
     
  3. Okay, so I haven't had boxed mac and cheese in YEARS and I have to admit I snuck a few bites before I mixed everything together...brought so many memories. The dish was SO good. It was loaded with flavor and was a big hit at dinnertime. I can't recommend it enough.

  5. Did not have box of mac & cheese so I used rice. Used fresh tomatoes and mushrooms, cooked rice 2/3 way through and then added to casserole with cheese and put the parmesan on top before baking for 20 min. Was very good. Bet it is awesome with the mac & cheese.

Tweaks

  1. I am going to use green peppers as well as onion and mushroom and 2 more kinds of cheese Colby Jack and casserole cheese by Kraft, I believe its like 4-5 different kinds of shredded cheese in a bag hmmmm......good!! Also not as many tomatoes I don't like a lot of tomatoes,many a half can of diced tomatoes will do the trick!!
     
  2. Topped it with scallions right at the end for some color and a bit of added flavor!

  4. I made a few modifications but overall it was great and my husband enjoyed it as well and we both despise Kraft dinner. I ended up using Annie's organic version of kraft dinner (i found it in Sobey's in the organics aisle)...not sure the portion size in the box but one box was enough for 1lb of ground chicken. I substituted green pepper for the mushrooms (cause gross) and then added tomato paste, italian herbs mix, garlic powder and salt and pepper. I'm sure you could even use a bit of pasta sauce vs tomato paste and it would work just as well. I didn't have parmesan cheese so i used a mozza cheddar mix on the top when i baked it in the oven. It tasted more baked pasta-like and it didn't have that kraft dinner taste that i don't enjoy so we really liked it!
     
  5. I gave this 4 stars. My 3 yrs & 4 yrs old newphews loved this casserole. I really liked it to. This was my first time using ground chicken and it was so easy to make. I used canola oil in place of the oil olive oil. I used a regular cooking onion in place of the sweet onion. I didn't have fresh basil on hand so I used a little dried basil leaves. I mixed the breadcrumbs & parmesan cheese together. Next time I make this I will mix the cheese in the casserole and top it with breadcrumbs. We will have this again!
