Every summer I go to the farmers markets and get fresh vegetables. Lately the farmers in our area are planting many different types of beets. This recipe is simple and the tender young beets are great.
- 2 lbs fresh beets
- 2 tablespoons olive oil
- 2 teaspoons sea salt
- 1⁄4 teaspoon fresh ground black pepper
- Trim stems from beets.
- Wash well.
- Peel beets and cut into quarters.
- Rub beets well with oil.
- Season with salt and pepper.
- Place on low heat grill.
- Cook til tender and lightly browned.
- Serve warm or cold.
What a delight! I have to admit that I had to use jarred beats....I went to 4 different stores and couldn't find any!! But I just had to make these....so I went ahead with the recipe since I was grilling already tonight. I'm so happy I did...these are wonderful! Just as good cold as they are hot. I used lots of black pepper, because I love it. Eliminated the salt, since they were jarred. Thanks for sharing! Made in honor of your win in Football Tag, Week 1! Happy Birthday!!
This was the first time we ever tried grilled beets and we enjoyed them very much. The prep was very simple and the results very good. Thanks for posting!
I knew grilled beets had to be as easy as roasted ones but I just had to see it before I could try it : p These turned out great and didn't require heating up my kitchen on a beautiful summer day. Thanks for the guidance!
