  • Cook the barley in the stock for about 15 minutes.
  • Add onion, celery, pepper and garlic and cook 15 minutes.
  • Add potatoes and simmer till the potatoes are almost done (about 10-12 minutes).
  • Add your greens and cook 5-7 minutes.
  • You can mix whatever greens you like.
  • If using artichokes, add when you add your greens.
  • Taste and correct seasoning.
  • You may need to add additional stock as you cook.
