Granola With Honey and Coconut Oil

- 5 cups old fashioned oats
- 1 cup mixed nuts
- 1⁄4 cup flax seed (optional)
- 1⁄4 cup shredded coconut (unsweetened preferred ingredient ) (optional)
- 1⁄3 cup honey
- 1⁄3 cup coconut oil
- 1 teaspoon vanilla
- 1 teaspoon almond extract
- 1⁄2 teaspoon salt
- 2 teaspoons cinnamon
- 1⁄2 cup dried fruit (optional)
directions
- Heat oven to 325. Place oats, nuts, flax seed and coconut in the baking pan. Melt coconut oil; mix in the honey, vanilla, almond extract and salt. Pour over oats and nuts and mix well. Bake for 15 minutes and stir; 15 minutes and stir. Repeat until at desired browness. Take out and add dried fruit as desired.

I'm a homeschooling mom of 4 beautiful ladies. My husband is in the Navy and currently working on his PhD so life is busy but never too busy to work my magic in the kitchen.
