An easy and elegant way to serve a clear soup as an appetizer.
- 2 (16 ounce) cans chicken broth (heated)
- 3⁄4 cup shredded lettuce
- 2 sliced scallions (diagonally)
- 1 lb good lump crabmeat
- fresh coarse ground black pepper
- Divide heated heated broth into 4 bowls.
- Top each bowl of broth with 1/4 of the crab meat.
- add 1/4 of the shredded lettuce to each bowl.
- Top each with 1/4 of sliced scallions.
- Garnish with coarsely ground black pepper.
