Go Bananas Healthy Cookies

- 1 1⁄2 large ripe bananas, mashed
- 1⁄2 teaspoon vanilla bean paste or 1 teaspoon vanilla extract
- 2 tablespoons coconut oil, warm (or olive oil)
- 1 cup rolled oats
- 1⁄3 cup almond meal (ground almonds)
- 3 tablespoons coconut, finely shredded, unsweetened
- 1⁄2 teaspoon cinnamon
- 1⁄4 tsp.fine-grain sea salt
- 1⁄2 teaspoon baking powder
- 1⁄3 cup vegan chocolate chips or 1/3 cup dark chocolate bar, chopped
directions
- Preheat oven to 350°F.
- In a large bowl, mash the bananas, and then mash in the vanilla and coconut oil; aside.
- In another bowl, whisk together the rolled oats, almond meal, shredded coconut, cinnamon, salt, chocolate and baking powder.
- Add the dry ingredients to the wet ingredients and stir until combined. The dough is very loose and does not hold together well, but don't worry about that.
- Take a couple teaspoons of teaspoons of the dough in your hand, and gently form a ball, and squeeze it together as much as you can.
- Place 1-inch apart on baking sheet. Bake for 14 minutes until bottoms are golden. Let cool for about 20 minutes to set.,.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
