These are a variation on Bette Hagman's Flourless Peanut Butter Cookies from the Gluten Free Gourmet. I love chocolate and peanut butter, so I experimented a bit and came up with these easy, fast, and delictable cookies. Don't be scared about the lack of flour - these cookies are a favorite of celiacs and non celiacs alike!
- Preheat oven to 375.
- Mix all ingredients together in a mixing bowl. Place 1 T (about one spoonful) of dough about 2 inches apart on ungreased cookie sheet. Cook for 15-20 mins, depending on your oven and altitude.
This is also in Connie Sarros dessert cookbook using 2 eggs and 2 cups of chips. It is my favorite cookie recipe and easy for kids to make.
these cookies are very sweet and very crumbly. they need a little something to help them hold together better.
