    Directions:

    1. 1
      In a small bowl, stir together the flour, baking powder, soda, salt, ginger and cinnamon.
    2. 2
      Set aside.
    3. 3
      In a large bowl, beat together the egg and milk, then stir in the molasses,and then the oil.
    4. 4
      Add the flour mixture until just combined.
    5. 5
      Pour a quarter cup of batter for each pancake on a preheated grill.
    6. 6
      Cook on the first side until the batter if full of bubbles on the surface.
    7. 7
      Flip the pancake and cook til the second side is lightly browned.

      Nice change to regular pancakes, my children enjoyed them. I didn't want the molasses flavour to be too strong, so I lessened by 1 tbsp, I could have even gone a little less than that and used a bit of sugar as another reviewer suggested. I subbed Ener-G egg replacer for eggs and used some vanilla rice milk. Worked out great - it's a really thick batter which cooked up well.

      Yummy! My daughter is allergic to eggs so i used 2 tbsp of cinnamon applesauce in place of the egg other than that I made just as listed. I am not a morning person so I mixed it all up at night, put in a tupperware container so the next morning i just had to heat the pan and start cooking so everyone still made it to school on time. some ate it with reg syrup and some with cool whip. either way very yummy. thnx for sharing.
