  • Bring a large pot filled with 3 to 4 quarts of water to a boil. Add orzo and boil 8 minutes. Drain.
  • Meanwhile, place zucchini, tomatoes, and garlic in a microwave-safe bowl. Cover with plastic wrap or plate and microwave on high for 3 minutes. Remove, stir, cover and microwave on high for 1 additional minute. Remove and add orzo, olive oil, salt and pepper to taste. Toss well.

  1. Really quick and tasty ! Used almost the last zuke, and a BIG ripe tomato - made the combo VERY juicy. Added a plum tomato, chopped, for the last minute of cooking, and stirred in chiffonaded basil leaves, some Italian seasoning, and a big spoonful of feta when served. We ate the WHOLE thing !! Thanks, Kymmarie, for another presentation of bountifful garden veggies.
     
  2. This was very easy to make, and had good flavor. I did add a bit of salt and pepper, but also added some Italian herbs. I topped this with some cold Feta cheese at the table when serving. Delicious!
