Really quick and tasty ! Used almost the last zuke, and a BIG ripe tomato - made the combo VERY juicy. Added a plum tomato, chopped, for the last minute of cooking, and stirred in chiffonaded basil leaves, some Italian seasoning, and a big spoonful of feta when served. We ate the WHOLE thing !! Thanks, Kymmarie, for another presentation of bountifful garden veggies.
This was very easy to make, and had good flavor. I did add a bit of salt and pepper, but also added some Italian herbs. I topped this with some cold Feta cheese at the table when serving. Delicious!
