Garlic Breakfast Potatoes

ingredients
- 4 medium potatoes, chopped
- 1 medium onions or 1 medium bell pepper, chopped
- 1 -2 garlic clove, finely chopped
- garlic powder, to taste
- salt, to taste
- ground black pepper, to taste
- 2 -4 slices bacon, cooked, chopped (optional)
directions
- Add potatoes to a medium frying pan, cook on medium heat, stirring occasionally, until potatoes begin to become soft (a few minutes).
- Add remaining ingredients.
- Cook, stirring occasionally, until potatoes are slightly browned and onions or peppers reached desired texture.
- Serve topped with ketchup or salsa! Yum!

I really would like to be someone who cooks exotic, healthy and delicious foods and I try to expand my mental cookbook all the time. I learned all I know about cooking from my mom and great grandmother, who is currently 97 and still driving, and still call them if I can't remember specifics for a dish.
I have an immune disorder and accompanying hypoglycemia which restricts my diet. ( I have to eat protein every few hours to feel healthy, and also must be careful to eat very little "processed foods." No fast food or microwavable yummies for me. :( )
