  • Spread cream cheese over toast.
  • Sprinkle with parsley and green onion and distribute greens.
  • In a small skillet, fry egg in butter over medium-low heat.
  • Place egg over cream cheese mixture. Top with tomato and avocado. Finish with other slice of toast.
  • **Variation: Smash avocado to make spreadable.

  1. This was so easy and delicious. I followed the recipe exactly except I did not use parsley. Smashing the avocados gave the sandwich a nice texture. I didn't use quite 2 tablespoons of cream cheese, but I will next time. A very satisfying meal. Thank you for sharing!
     
  2. This is great! I smashed the avocado and spread it on the second piece of toast for each sammie. I used the optional pepper, but skipped the salt. And I used the spinach option. It was quite enjoyable! Thanks for sharing!

PLEASE RATE MY RECIPES!! :) My husband and I have been happily married for six years and we have two amazing children! There is no better compliment than when some one takes a bite of my very own Chocolate Chip Cookies and says they are the best they've ever tasted! (Sorry, it's a secret recipe!) I would love to open my own bakery someday... I like to cook for my family too, and have become exceptionally motivated since our son was born.
