- 1⁄3 cup olive oil
- 4 garlic cloves, minced
- 1 red bell pepper, sliced into thin 2 inch long strips
- 1 (10 ounce) package spinach
- 1⁄2 salt
- pepper
- 1 lb fettuccine
- 1 cup grated smoked gruyere cheese
directions
- bring a large stock of water to a boil.
- heat 1/4 cup of olive oil in a large skillet over medium heat.
- saute garlic for 1 minute then add peppers and saute 7 minutes more.
- pile on the spinach and cover the pan, cook about 3 minutes, until wilted.
- add salt and ground pepper and keep warm.
- when water comes to a boil add pasta and cook until tender.
- reserve 1/4 cup of pasta water and drain remainder.
- toss pasta with remainder of oil and stir in cheese to melt.
- add reserved water as needed get cheese smooth.
- to serve, put pasta on a plate and top with vegetable mixture.
