An excellent and tasty cranberry chicken, so easy to make in your crock pot!
- 2 lbs skinless chicken pieces (breasts or thighs)
- 1 medium onion, chopped
- 2 tablespoons oil
- 1 tablespoon Dijon mustard
- 2 teaspoons salt
- 1 teaspoon pumpkin pie spice
- 2 teaspoons chicken bouillon granules or 2 chicken bouillon cubes
- 2 cups orange juice
- 2 teaspoons orange rind, grated
- 1 lb cranberries, uncooked
- 1⁄2 cup sugar
- 1⁄2 red bell pepper, diced
- 1⁄2 yellow bell pepper, diced
- Add all ingredients to the crock pot.
- Cook 8 to 10 hours, until done.
- Serve over hot cooked rice.
I have made this now a couple of times and have been very pleased with the results. The chicken remains moist and the sauce is very flavourful. If thickened the gravy is delightful over noodles. The only change I made was to use ginger, nutmeg, and cinnamon individually instead of pumpkin pie spice since my family doesn't like cloves.
I was looking forward to prepare this on a busy day and come home to enjoy a great dinner. What a fiasco! I followed the instructions to the dot and programmed the slow cooker for 10 hours. I came home and everything was burnt, could not even taste it. I don't leave food by itself unless I have tried the dish before . I am pretty experienced with the slow cooker. I sincerely calculated that this dish should not have any problems but I was wrong. I own 3 slow cookers in different sizes for different size dishes and I use them regularly. Maybe someone can give me some feedback as what happened in this case. I would like to give it an other try but I am not sure if I will. I don't think I will rate this recipe we could not taste it.
I was looking for a fall-ish type chicken recipe and remembered I had saved this one in my cookbook some time back. What a delight. I used boneless skinless chicken breasts which ended up being moist, tender, and a medium burgundy color. Ths sauce was tangy with just a little bit of sweetness and even without thickening, went well over rice. I served with Derf's Sherried Mushrooms #20145 and salad for a fantastic meal.
