Fantastic Carob Fudge

"Tastes similar to “Eatmore” candy bars. Peanuts and sesame seeds may be replaced with any combination of nuts and/or seeds totalling 1 cup."

• Serves: 25

ingredients

• 1 cup carob powder
• 2⁄3 cup chopped peanuts
• 1⁄3 cup brown sesame seed
• 1 cup coconut
• 3⁄4 cup honey
• 1 cup peanut butter or 1 cup other nut butter
• 1 teaspoon vanilla

directions

1. In a bowl, stir dry ingredients together.
2. In a pot, melt honey with peanut butter over low heat.
3. When liquid, remove from heat and add dry mixture and vanilla; mix well.
4. Spread into 8x8-inch pan.
5. Refrigerate.

...this is so good, but I almost blew it because I had a hard time getting my homemade nutbutter to "melt"...I settled for just heating it "amap" & really working my wooden spoon and arm to mix...the nutbutter had extra flavors that added to the complexity of the fudge so it was worth the "workout"{{...some cinnamon, chili, and a mix of several nuts- all super complimentary to chocolat-T-ness}} :) It was a bit like mixing clay...{lol} I kinda thought I would have to chuck it and was getting scared...but after making the hugest mess of my copper bottom pot...it and I recovered...I had to add a bit of agave nectar for extra moisture and get down and dirty with my hands as I mixed ... decided to add carob chips (no measuring just tossing in in spontaneous bursts {{lol}} - some got all melty from the heat and some stayed chunky) - ...anyway got a TON of rich delish fudge...over 30 pieces...really good and after I ate some I had the extra energy to clean the sort of burnt brown muck crusted to the pan...which was easy to fix up and well worth the little mess and stress I caused...I am sure a more processed or professional peanutbutter with more oil would not create this problem at all... but then I would not have had as much of an adventure :)- These are delish and I would do it all over again...SO GOOOOOD!!!
