Easy to make, simple and delicious. Top with ketchup or hot sauce.
- 6 -7 cups water
- 3 -4 large onions, chopped
- 1 cup lentils
- 3⁄4 cup brown rice
- 1⁄2 cup olive oil (a must!)
- 1 tablespoon salt
- Sautee onions in olive oil-in soup pot.
- Add water, lentils, rice and slat.
- Cook 30 minutes or so: uncover and cook longer to thicken.
- Don’t substitute other oil for the olive oil. It gives the soup a wonderful flavor.
