- 4 boneless skinless chicken breast halves
- 3 tablespoons all-purpose flour (divided use)
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 teaspoons olive oil
- 1 medium onion, chopped
- 1 tablespoon butter
- 1⁄2 teaspoon dried thyme
- 1 cup chicken broth
- 3 tablespoons lemon juice
directions
- Combine flour, salt and pepper.
- Coat chicken with the flour mixture, and set aside 4 1/2 tablespoons for the sauce.
- Cook chicken in heated oil in a pan over medium heat until golden brown on both sides. Set aside.
- In the same pan, sautee the chopped onion in the butter until tender.
- Add lemon juice and continue to sautee. Add reserved flour and thyme. Gradually add broth, stirring continuously, deglazing the pan of any brown bits. Bring the sauce to a boil to thicken.
- Turn down the head adn add chicken back in pan. Simmer and cover until chicken in cooked through.

Although I did cut the recipe in half for just 2 of us, other than that, it was followed & we had a wonderfully satisfying main dish!
