My husband got this recipe from another guy at work. He made this for a dinner for me when I was still a vegetarian. Being as he never cooks I was amazed at how good this was.

  1. Saute onions in the oil.
  2. Add in the rest of the ingredients.
  3. Simmer 30 minutes.
  4. Serve over tomato slices.

This was really good and delicious, and I do like the kick that the salsa brings, especially when it is combined with the other ingredients. I used regular water with this recipe.

Excellent recipe for a week night dinner and when one is in the mood for vegetarian. I believe this is an Anne Lindsay recipe. I made it without the sliced tomatoes as I couldn't get any nice ones at the store but will try it again when I have fresh tomatoes from my garden.
