Recipe adapted from Real Simple


  1. Brush oil, garlic, salt, pepper and cayenne pepper mixture on thinly sliced eggplant and roast on a baking sheet in a 400* oven for 20-25 minutes. Amazing if grilled, If using English Eggplants, bleed first.
  2. Combine Bean mixture and Mash.
  3. On toasted slices of Foccacia, layer eggplant, roasted red pepper, lettuce/spinach and Bean Mash.
