ingredients
- 236.59 ml coarsely chopped dates
- 118.29 ml chopped walnuts
- 78.78-118.29 ml sugar or 78.78-118.29 ml honey
- 295.73 ml whole wheat flour
- 4.92 ml baking soda
- 2.46 ml salt
- 236.59 ml boiling water
- 14.79 14.79 ml margarine or 14.79 ml oil
- 4.92 ml vanilla
- 473.18 ml whipped cream, to garnish,if desired
directions
- Preheat oven to 350F and grease and flour a 8" or 9" square pan.
- In a large bowl, combine dates, walnuts and other dry ingredients.
- In a small bowl, mix water, butter and vanilla.
- Add water mixture to date mixture and mix until just moistened.
- Pour batter into prepared pan and cake for 30-40 minutes or until a toothpick inserted into the center comes out clean.
- Serve warm or cold; plain or topped with whipped cream.

very good,the healthiest cake I have come across..I used 1/3 cup of sugar, and used margarine isntead of butter.But it turned out soo good,very cake like(despite using whole wheat flour), more like a fruit cake sans all the fat calories..I would love to try out different dry fruits like apricots, prunes,raisins,black currants,etc..

Wow--this is amazing!! It's like the cake part of sticky toffee pudding; moist and sweet and delicious! I made a half cake and baked it in an 8 x 4 inch loaf pan. And I used honey (1/4 cup), whole wheat pastry flour, and light olive oil. We ate it without the whipped cream and it was great! Next time I might try it with some low-fat Reddi-wip just to see how it tastes that way. I love that this is an old recipe--someone really knew how to bake! Thanks so much for posting it Roosie!!

i went strawberry picking last week and had to freeze more than half of what i picked as the fruit was so ripe it was already rotting. i used about 2 cups of frozen strawberries instead of dates, ommitted the walnuts and used 1/2 cup of honey. PERFECT!! the cake is really moist and dense, the strawberries are running and it's not too sweet. thank you! :)
