An easy barbecue meatloaf that will please the pickiest eaters
- 2 lbs lean ground beef
- 1 (6 ounce) package chicken flavor stuffing mix
- 1 cup water
- 2 eggs, beaten
- 1⁄2 cup barbecue sauce, divided
- Preheat oven to 375.
- Mix all ingredients except 1/4 cup of barbecue sauce.
- Shape meat mixture into oval loaf in 13x9 inch baking dish.
- top with remaining barbecue sauce.
- Bake 1 hr or until cooked through.
This was delicious! I first saw it in a Kraft Food & Family Magazine, and just got around to trying it. Typically I do not care for meatloaf, but I really did want to try this one. It is just delicious! I think that next time I make them I will put them in muffin tins because my husband and I really enjoy the crusty outer portion of the meatloaf. Thank you for posting, this has caused me to add meatloaf to my meal rotation!
I have been making this meatloaf for years, and it's true -- even the picky eaters LOVE this stuff! I was going to post it myself, but I'm glad I did a search on it before I did. :) I just use whatever stuffing mix I have on hand. I shape this into 2 loaves and bake for about 35 minutes. (might need to put the loaves on a bit of an angle to fit both in the dish). Sometimes I halve the recipe when it's just me and dh. When making the entire recipe, I'll keep one to eat and the other to freeze for another time. It turns out wonderfully every single time!
