A yummy addition to any Mexican meal! My kids love it! Use leftovers for egg burritos in the morning!

  1. Combine ingredients, cover and bring to boil over med-high heat. Turn heat down to a simmer until water is soaked up and rice is tender (about 20 minutes).
  2. Microwave directions: Dump ingredients into a microwave safe dish and cover. Cook on high for 12 minutes. Cook on medium for an additional 20 minutes. Stir. Serve.
