A yummy addition to any Mexican meal! My kids love it! Use leftovers for egg burritos in the morning!
- 1 cup rice
- 1 (10 ounce) can rotel (Or any brand tomatoes with green chiles)
- 2 chicken bouillon cubes
- 2 cups water
- 1⁄2 teaspoon cumin
- 1⁄2 teaspoon italian seasoning
- Combine ingredients, cover and bring to boil over med-high heat. Turn heat down to a simmer until water is soaked up and rice is tender (about 20 minutes).
- Microwave directions: Dump ingredients into a microwave safe dish and cover. Cook on high for 12 minutes. Cook on medium for an additional 20 minutes. Stir. Serve.
