Used mild rotel & cut back the chili powder by half, just as I did with the red pepper (crushed red pepper flakes)! Although we do love chili, we don't care for it too spicy hot! Worked great, & after serving up 2 bowls, I divided the rest into 2-serving portions, cooled it in the refrig & then it went into the freezer to enjoy another time! Thanks for posting the recipe! Made this for Fall PAC 2011 and it is an easy chili to make. I did use half ground beef and half cut up chuck roast (I had some to use in the freezer), I used regular rotel, fresh garlic and kidney beans. I did leave out the red peppers because DH's Dad is coming for lunch and he isn't as crazy about hot/spicey things. I have sneaked a few bites and it is quite tasty...thank you!
