Double Lemon Pudding Sprite Bundt Cake

"Wow! I saw this in one of my church cookbooks and had to post it. I've never seen a lemon bundt cake before that calls for two lemon pudding mixes plus a can of lemon-lime soda."

  • 510.29 g box lemon cake mix (yellow cake mix may also be used)
  • 2 (170.09 g) package instant lemon pudding
  • 4 eggs
  • 283.49 g can Sprite or 283.49 g can other carbonated lemon-lime beverage

directions

  • Preheat oven to 350.
  • Grease bundt pan.
  • Mix all ingredients together well.
  • Bake for 45-55 minutes
  • Serve plain with whipped cream or ice cream.

  3. This is a good lemon bundt cake. I forgot to get the Spite when I was at the store so I subbed lemonade. Came out just fine.

Okay, with 5 kids I let majority rule:) I thought it was a little to lemony but with 3 kids home last night (and the cake didn't get cut until 10 pm) there is only a half of it left (at 8 am) I have to give it 5 stars. All 3 (even Miss Chocolate lover) said awesome cake mom! I was going to frost it with a lemon/cream cheese frosting but I guess it will have to wait until the next time I make this. I was going to put lemon zest in it but glad I didn't as it would have made it even more lemony. Thanks for posting this, I am sure I will make again!
     
  5. This recipe is great for its simplicity and taste. I love the idea of throwing everything into a bowl and let a mixer do the work. Because I like the lemony/tart taste, I decided to add zest from one lemon and it did the job. Thanks for sharing this mistake proof recipe.
