Double Chocolate Cake

"A one-pan cake that needs no icing. I found this in a wonderful undated (1970s??) self-published cookbook, "Cooking for My Friends", by Stevie Scott. This 357 page book was TYPED! I have only made this once and decided it was good enough to share. I mixed the chips and nuts into the batter instead of leaving them on top. And I used peppermint extract instead of creme de menthe. Next time, I'll cut the sugar back to 3/4 cup."

  • In an 8 inch square cake pan, combine oil and chocolate. Heat in 350F oven for 4 minutes -- stir.
  • Add water, sugar, egg, flour, soda, salt and vanilla. Beat batter with fork until smooth, uniform and creamy (about 2 mins). Spread evenly in pan and sprinkle with chocolate chips and nuts. Bake at 350F for 40 mins until cake tests done.
  • Great topped with whipped cream flavoured with creme de menthe.
