- 2 lbs shrimp
- 1 egg, beaten
- 1 tablespoon water
- 1 cup breadcrumbs, toasted
- 2 teaspoons curry powder
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
- 1⁄4 cup oil
- marmalade, soy dip

- 1⁄3 orange marmalade
- 1⁄4 cup lemon juice
- 1⁄4 cup soy sauce
- 1 garlic clove, minced
- 1 dash ginger
- 1 teaspoon cornstarch
directions
- peel and devein shrimp. rinse in cold water.
- combine egg and water in a bowl.
- combine dry ingredients in another bowl.
- dip shrimp in egg then in dry ingredients. place on a well greased cookie sheet. drizzle oil over shrimp.
- bake 500 degrees for 10-15 minutes or until brown. serve with marmalade dip.
- to make dip: combine ingredients and mix well. cook stiring constantly.
- until clear and thickened. serve hot.
