  • Arrange in alternate layers cucumber, zucchini & onions.
  • Mix VINEGAR and SUGAR dissolved in 1/2 cup HOT WATER add SALT, PEPPER, & CRUSHED RED PEPPER.Add a couple ice cubes to chill.
  • Drain any water formed from cucumbers before adding the dressing.
  • Allow vegetables to marinate in the dressing at least 1 hour before serving.

  3. Just excellent, fresh and delicious! I made this this today but only used zucchini and onion (my cucumbers had expired). I used 3 medium zucchini and doubled the sauce but only used 1/2 cup of water. I really like it!!!
     
  4. Very good. I dont usually like cucumbers, but I liked this salad. My husband also says it is a keeper. Next time, I am considering adding a sliced tomato.
     
  5. I absolutely adored this sweet and spicy salad! I love zucchini (when I was a wee tot, I called 'em squeenies and begged for them often!) and cukes. Fantastic flavor from a few simple ingredients. I did sub red onion for the sweet as that's what I had to hand.

Tweaks

  1. I used splenda instead of sugar, cider vinegar instead of regular, added a purple bell pepper from the garden, and did not heat the water. I really like the spicy heat that lingers on the tongue after you have had a bite. I also liked that this is not as sweet as many cucumber salads. It was just right! Thanks for a great recipe.
