  • If using regular cucumbers, cut in half lengthwise and scoop out the seeds. Cut the cucumber halves in thin slices It also calls for a small white onion, thinly sliced. Place the cucumber and onion slices in a non-aluminum bowl and sprinkle with 1/2 t salt. By the way, what did you do with the red cabbage?.
  • Stir together the vinegar, water and sugar, until the sugar dissolves.
  • Pour over the cucumbers and let marinate for at least 15 minutes.

  1. YUM! Very good recipe! I really really enjoy this recipe! I was looking for some way to use all of the cucumbers from my garden so they didnt waste. This is perfect! Very tasty! Hubby even loves them, wow! And we both REALLY love the idea of scraping out the seeds- the seed gross me out :)
     
  2. I also use this recipe....Yummmm. If you get creative, this base could be changed by added different spices or hot sauce.
