Crunchy Chicken Salad

"This salad was served at a friend's baby shower. It can be served on lettuce as a spread for crackers or as sandwiches using small croissants."

ingredients

• 5 1⁄2 cups chicken (cooked and cubed)
• 3 eggs (hardcooked and chopped)
• 1 cup celery, chopped
• 1 cup sweet pickle, cubed
• 1 cup toasted pecans, chopped
• 1 cup green seedless grape, halved
• 1 cup mayonnaise (can use light)
• 1 (8 ounce) can water chestnuts, drained and chopped
• 1 (8 ounce) can pineapple tidbits, drained and chopped
• 1⁄2 cup pimento stuffed olive, chopped
• 1 small onion, chopped (red or can use green onions)
• 1 (2 ounce) jar pimentos, drained and diced
• 1 tablespoon fresh lemon juice

directions

1. Combine all ingredients; blend well. Chill. Serve on lettuce cups or use for sandwiches.
