- 12 corn tortillas, divided
- 425.24 g can black beans, drained
- 2 tomatoes, chopped
- 1 onion, sliced
- 453.59 g bag frozen cauliflower, chopped
- 236.59 ml black olives, sliced
- 793.78 g can green enchilada sauce
- 226.79 g cheese, shredded, divided
directions
- Spray pam in crockpot.
- Overlap 4 tortillas.
- Mix the black beans, tomatoes, onions, cauliflower and olives.
- Spread 1/2 vegetable mixture, 1/2 cup of cheese, 1/2 cup green enchilada sauce, layer tortillas.
- Repeat layers ending with tortillas.
- Top with rest of enchilada sauce.
- End up with cheese for the last 30 minutes.
