Crock-Pot Meatloaf and Packet Potatoes

"This is a nice, classic meatloaf cooked in the crockpot with a packet of golden potatoes cooked right on the top. Just add a veggie and you have a complete, easy meal. My measurements are approx. because I don't measure anything when I'm cooking."

  • In a large bowl combine all ingredients except potatoes, second amount of seasoned salt and olive oil. Mix thoroughly and pat into the bottom of your crock. I just level mine out, covering the entire bottom of the crock. Then, take a large piece of aluminum foil and place the diced potatoes, drizzle with olive oil and season with seasoned salt. Then, fold the aluminum foil into a nice packet and place on top of the meatloaf.
  • Cook on High for 3 to 4 hours until done.
  • I serve this as is with ketchup on the side because that is the way we like it. Feel free to top with tomato sauce or gravy.

  1. I made a modified version of this recipe, and it turned out great! I used my meatloaf recipe and placed it into a small glass loaf pan. Then I placed the loaf pan inside of my oval crock pot. I followed the directions for the potatoes and for cooking time, and it turned out great! I will definitely make this again!
     
  2. meatloaf was awsome,my kids actually ate it.my taters didnt get done though,probably cause i made more than asked for.but still i fried them up & we had homefries instead.my 7 year old used leftovers for nachos. thanks for sharing a good recipie.
