- 4 cups thinly slices seedless cucumber
- 1 teaspoon salt
- 1⁄3 cup yogurt cheese
- 2 tablespoons rice wine vinegar
- 2 tablespoons minced fresh dill
- 1⁄8 teaspoon pepper
- 1 cup thinly sliced red onion
- Toss cucumber with salt and set in a colander for 30 minutes. Stir occasionally, rinse and dry.
- Whisk the yogurt cheese, vinager, ½ tsp salt, dill and pepper in a bowl until smoth.
- Add cucumber and onions and toss to coat, chill.
