- 1 tablespoon extra virgin olive oil
- 2 cloves garlic, crushed
- 10 ounces frozen chopped spinach, thawed,partially drained
- 1⁄4 cup fat free cream cheese (or more, to taste)
- salt and pepper, to taste
- 1 dash nutmeg (preferably freshly grated)
- In small saucepan, saute garlic in oil.
- Add spinach and cheese; stir until cheese is thoroughly melted.
- Add seasonings.
Dancer, this is excellent. I use it as a dip with crackers or to put in burritos.
