This soup is simply beautiful. I have prepared this soup many times and is always a hit!. Some people dont eat pumpkin for some reason, well if you try this recipe-im sure you'll make it again. Enjoy

Very easy soup that everyone, including a toddler, enjoyed. I didn't use a blender,just a potato masher which did the job well. Great recipe Shane!

  1. Saute onion and garlic in the butter until soft.
  2. Add pumpkin, sugar, nutmeg and curry.
  3. Add stock and bayleaf.
  4. simmer for 30 minutes.
  5. Remove bayleaf.
  6. Puree in blender (Hand held blender is fine) with milk.
  7. Season to taste and finish with cream and chives.
