Crazy Cake With Two Icings

"This is a recipe that I can actually make and it comes out perfect everytime! Believe me when I say if I can do it, ANYONE can do it!!! I got this recipe out of an allrecipes.com magazine and it was submitted by Carolyn Hobbs in there. The only thing I could tell that was wrong with it is that it makes WAY to much of Icing #2 so it needs to be scaled way back...I just never did it. It just needs to be drizzled on top with a squirt bottle or something like that. Maybe one of you amazing cooks could figure that part out LOL. Hope you enjoy as much as we did!!! Looking at the recipe it seems like it would take forever but it really doesn't at all and is super easy!!!"

  • For Cake:

  • Preheat oven to 350.
  • Stir first 5 ingredients directly into an ungreased 9X13 cake pan.
  • In a bowl, stir together water, vinegar, and vanilla; pour over dry ingredients.
  • Pour oil over all.
  • Using a fork, stir until mixture is a uniform color and has no lumps.
  • Bake 30-35 minutes or until a toothpick inserted in center comes out clean.
  • Cool COMPLETELY in pan then frost with icing #1 and drizzle icing #2 over that.
  • Icing #1.
  • Whisk together flour and milk in a small saucepan over medium-high heat; cook, whisking constantly, until mixture has thickened.
  • Remove from heat and cool to room temperature.
  • Beat butter and sugar together until light and fluffy.
  • Add flour mixture and beat until icing is fluffy and sugar is dissolved.
  • Icing #2.
  • Needs to be scaled way down because if you use it all it makes a big soupy mess on top of the cake so I always throw MOST of this away!
  • Combine first 5 ingredients in a saucepan over medium heat until butter melts, stirring well.
  • Increase heat to medium-high and bring to a boil; cook 1 minute, without stirring.
  • Remove from heat and stir in vanilla.
  • Beat until thick.
  • I always use one of those squirt bottles you can get anywhere for this step; pour into squirt bottle and drizzle as much as you want on top of cake over icing #1.

  2. This is such an easy and delicious cake. I found this recipe in an cookbook that I have lost overseas but made this cake for large gatherings as well as for our very large family. I modified the amount of oil and would replace 1/4-1/2 with applesauce since making a larger quantity with that much oil was a little too much.<br/><br/>What I love about this recipe are the 2 icings. They are delicious and not heavy.<br/><br/>I read that this recipe was common during the Depression Era. As you notice there is no milk nor eggs in the mix, except in the icing. If you don't want to use the icing, you can also sprinkle it with powdered sugar.<br/><br/>Thank you for this excellent recipe.

I am a mommy to 1 very beautiful and sweet little boy named Zachary! I waited 12 1/2 years to be called mommy and let me tell you, he was worth the wait!!! He is also the best Christmas gift I ever got (he was born December 24, 2008)! Hubby and I met in February of 1996 and we married just 6 weeks later! Lucky for both of us that neither of us turned out to be an axe murderer or anything psycho like that LOL. Even though I have been married over 13 years now, I am new to the cooking world. I can fix easy stuff (spaghetti, chili, etc., and am great at opening cans and fixing tv dinner type stuff LOL). I am here on recipezaar because I don't want my son to grow up as I did...fastfood and lunchmeat sandwiches. I am trying my best and hope I succeed at the good mommy thing and I believe good homecooked family meals will have a big hand in that!
