- 1 1⁄4 cups all-purpose flour
- 3⁄4 cup cornmeal
- 1⁄3 cup sugar
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 2 eggs
- 3⁄4 cup milk
- 1⁄4 cup vegetable oil
- 1 cup chopped fresh cranberries or 1 cup frozen cranberries
- 2 tablespoons sugar
directions
- Preheat oven to 400°; grease bottom and sides of 8-inch square pan with shortening or cooking spray.
- In a bowl, combine flour, cornmeal, 1/3 cup sugar, baking powder, and salt.
- Add in eggs, milk, and oil; beat with a spoon until mixed.
- In a small bowl, toss cranberries with 2 T sugar until coated; fold into batter.
- Transfer batter to pan; smooth top.
- Bake 25-30 minutes or until pick comes out clean; serve warm.
