I used some red onion, some green onion, about half an orange pepper, 3 C chicken broth, 1 1/2 C couscous and no butter. I sauteed the vegetables in a little olive oil first and then added the chicken broth and the rest of the ingredients. So, it was quicker. It turned out very well. The amount of liquid to couscous was just right. I served it with chicken. :)

I would give this four stars because it was good but it didn't "wow" me; however, I have to give it 5 stars because EVERYONE ate it and loved it (DH, 5 yr old, 3 yr old, and 1 yr old)!! I used the recipe as a rough guide--and I used up everything in my fridge, which was half an onion, 2 carrots, and half a green bell pepper. I needed it done quickly, so I sauteed the veggies in olive oil until softened but not brown, added the boiling chicken broth, and followed the rest as is. I used tri-color couscous and it just happened to be very color-coordinated as well!! Was a great side to our barbequed chicken--thanks!!

I live in a beautiful rural area, and I get lots of backyard visitors, including deer, coyotes, bears, raccoons, and skunks. I'm basically a homebody, and I enjoy reading, writing, surfing the net, working out, studying the Bible, taking scenic photos, and of course, cooking.
