- 453.59 g bulk Italian sausage
- 1 large onion, sliced
- 2 celery ribs, sliced
- 2 garlic cloves, minced
- 1182.95 ml water (I would use low sodium broth)
- 2 medium potatoes, peeled and chopped
- 411.06 g can diced tomatoes, undrained
- 2 medium carrots, sliced
- 9.85 ml salt
- 4.92 ml dried basil
- 4.92 ml dried thyme
- 2.46 ml dried oregano
- 2.46 ml pepper
- 1.23 ml cayenne pepper
- 1 bay leaf
- 2 medium zucchini, sliced
directions
- In a Dutch oven over medium heat, cook the sausage, onion, and celery until meat is no longer pink; drain.
- Add in garlic; cook 1 minute.
- Add in water, potatoes, tomatoes, carrots, and seasonings.
- Bring to a boil; decrease heat, cover and simmer for 15 minutes.
- Stir in zucchini; simmer 8-10 minutes longer or until vegetables are tender.
- Discard bay leaf.
