  • Heat oil in a large skillet over med. high heat.
  • Add yellow onions and sausage.
  • Saute 1 minute
  • Add green onion, celery, bell peppers and garlic.
  • Saute 1 minute
  • Stir in corn muffins, stock and Creole season. Season to taste with salt and pepper.
  • Cook stirring and shaking the skillet about 2 minute
  • Remove from heat and serve.
