Corn, Potato and Cheese Soup

- 29.58 ml butter
- 2 shallots, finely chopped
- 226.79 g potatoes, peeled and diced
- 59.16 ml all-purpose flour
- 29.58 ml dry white wine
- 295.73 ml milk
- 396.89 g corn kernels, drained
- 85.04 g gruyere cheese, grated (or cheese of your liking)
- 8-10 fresh sage leaves, chopped (try to really use fresh...it makes a difference)
- 473.18 ml heavy cream
- crouton (optional)
directions
- Melt butter in heavy-bottom pan over low heat.
- Add shallots and cook, stirring frequently, for 5 minutes or until softened.
- Add potatoes and cook, stirring for 2 minutes.
- Sprinkle in four and cook, stirring constantly, for 1 minute.
- Remove from heat and stir in the wine.
- Return to heat and stir in the milk.
- Bring to a boil, stirring constantly, then reduce heat to a simmer.
- Stir in corn, cheese, chopped sage, and cream and heat through gently until cheese has just melted.
- Ladle into bowls. Add croutons if desired and garnish with sage.

A very good soup that DH and I enjoyed very much, rich and creamy with plenty of flavour. I was thrilled to use sage I had recently planted, felt very proud of my own leaves! My ONLY change was that I felt I had to add more liquid, I didn't feel the potatoes were going to cook in that small amount of milk, so I added at least a cup of water, going by feel, really. I still ended up with a thick 'chowder', and was happy with the consistency. I also didn't add as much as two cups of cream, probably about half of that. But these were personal touches, this is an excellent soup that I will make again. Thanks for a lovely recipe, JennyLynn! Made for PAC Spring 2009

I recently moved to Maryland after having been raised in New Jersey. My boyfriend and I have been together for almost 7 years and we love living here! He is a T.A. and grad student at the University of Delaware and I work full-time as a Pharmacy Technician. I love to cook, but I am new to it. I just started last July ('07) when we moved in together. He is super busy, but tries to help when he can, and he is great in the kitchen! He's helpful and insightful and loves to eat! I'm still a little slow in the kitchen, but I'm catching on. We love the outdoors, nature, and curry! We have no children, but 4 of the cutest fish that you'll ever see! We are busy and our schedules are hectic, but we always make time for great food and even better conversation.
