Copycat of Arby's Chicken Salad Sandwich

"This is the actual Arby's Chicken Salad Sandwich recipe from the restaurant. This is a scaled down version, so I'm guessing on serving sizes. You may need to have more bread and lettuce on hand."

  • 1. Combine the first six ingredients and mix well.
  • 2. Use two pieces of bread and one lettuce leaf for each sandwich.
  • 3. Slide lettuce leaf on to one piece of bread.
  • 4. Put two large scoops of chicken salad mixture on lettuce leaf; top with other piece of bread.
  • ENJOY!

  1. I NEED to know what kind of mayo is used in this recipe. It does not taste like any of the brands that I have tasted from the grocery store. Doe anyone know? Thanx!
     
  2. Wow! Wowwy, wow!! My family just keeps thanking me for making this. I can't brag here!! All I did was buy the ingredients, chop them up....Fudged a little on the plus side of the measurements of my favorite ingredients (hint: pecans, apples), grapes). This is absolutely Awesome!! My husband said he'll definitely request it again. I posted 3 pictures separately, but I believe this one of the three says it all! So delish! Anyone know what to do with all the extra? Can I freeze it... with fruit being in it and all?

  1. I was a manager of Arby's and I have made tons of this! I would like to confirm a few things. The chicken we would use was grilled chicken. It came to us precooked, diced & frozen. We would just thaw it out in the cooler, open the bag, weigh it and mix it all together. The grapes were red seedless. We would cut them in half by hand. The celery would come in stalks. We would rinse then chop by hand. The apples were presliced in packets. Like the ones you get in the Arby's kids meal. Basic red apples that we would dice by hand. The pecans are the same you would buy at the store in packages. As for the mayo, it's the same mayo they would put on their sandwiches. The lettuce is just your basic green leaf lettuce that we would rinse and chop the ends every morning. Every morning we had to dice everything by hand and make fresh batches. I find they use too much mayo. It is NOT healthy like most people think. It is NOT reduced fat or fat free mayo. We did NOT put salt, pepper, lemon juice or ANY sort of seasoning. Just those basic ingredients
     
  2. You should actually use 1 lb of chicken not 8 oz. And it should yield 6 sandwiches at 6 oz. They dont use a particular apple just what the distributor gives or what they can get at the store in a pinch. They do (like the commercial says) slice all by hand.
     
  3. Thank you for posting this! I love this, it's so refreshing. I added a dash of onion powder, dash of lemon pepper and a splash of Worcestershire sauce (I know, sounds nasty, but balances the sweet grapes & apple. I saw this in another recipe).
     
  4. Why would you say you believe Arby's used red delicious apples when in your description you SAY this is the ACTUAL Arby's recipe? Wouldn't you KNOW what kind if this was the REAL company recipe?

I'm a single mom to four wonderful kids. They keep my hands full! My job as a nurse is very enjoyable, as I am definitely a "caretaker" type of person. I love being a mom and a nurse! Circumstances beyond my control have made tightening my family's belt more than ever before. Even going through nursing school full-time with four kids wasn't this tight!
