Cool Cucumber Relish

"This is great on hot dogs. This can be made ahead and reheated if necessary."

ingredients

• 1 cucumber, peeled, seeded and diced
• 236.59 ml red onion, chopped
• 59.14 ml Italian vinaigrette dressing
• 29.58 ml spicy brown mustard

directions

1. Combine cucumber, red onion, dressing and mustard.
2. Enjoy on hot dogs!

So easy - we liked this a lot. Agreed with twissis that it could use a touch of sweetness, so I added a bit of raw sugar.

This is so easy-to-fix & very good, Lainey. Hot dogs (pylsur in Icelandic) are very popular here, but they are 1-dimensional about how they eat them ... just mustard & crispy fried onions. BUT I like all varities so this was a nice surprise. I made my vinaigrette dressing using olive oil, lemon juice & McCormick Classic Herbs Italian Seasoning Blend. I did add 1/2 tsp sugar to take the edge off the tartness & fresh snipped chives just for color. Thx for sharing this recipe w/us. :-)
