- 1 1⁄2 bananas
- 1⁄2 cup applesauce
- 1 teaspoon vanilla
- 1⁄2 cup brown sugar
- 1 cup all-purpose flour
- 1 1⁄2 teaspoons baking powder
- 1 dash salt
- 1 teaspoon cinnamon
- 1 dash nutmeg
- 3⁄4 cup oatmeal
- 2 tablespoons raisins (optional)
directions
- Blend wet ingredients in a blender. mix wet and dry ingredients. stir in oatmeal(raisins too if you want). drop by generous spoonfuls onto a cooking sprayed cookie sheet.
- bake at 350 for 20-30 minutes.

These were more like "cakeies" than "cookies". I think the thing that I had a hard time with is that they became sticky after a few hours. I did double the recipe so not to have a half banana left over. I used a hand blender for ease of mixing and let the mixture set up for about 5 minutes before putting them on a parchment lined baking pan. I put raisins in half and left the other half plain for my husband who doesn't like raisins. Good for just us and wanting a healthy cookie but "not for company" if you know what I mean! Thanks for the recipe.
