I love the slight coconut taste, and came up with this after looking over a dozen recipes on here, and I felt a little more daring!

This recipe was a little bland for my family's taste. However, the aroma and the appearance are wonderful. I ended up adding some spices... some red pepper flakes, sea salt,paprika and garlic powder (because the cloves I put in couldn't really be tasted.) All in all, I think this is a fine recipe, but for my taste I wish the cilantro, lime and coconut flavors were a bit more prevalent. I think next time I will double the lime juice, double or triple the cilantro, double or triple the garlic, and possibly put in some flaked coconut as well. However, if you prefer mild nuances of flavor, then you should make the recipe as it is.
- 4 chicken breasts, diced
- 3 tablespoons butter
- 3⁄4 cup chopped onion (to taste)
- 1 tablespoon garlic, chopped
- 3 tablespoons cilantro, chopped
- 1 tablespoon curry powder
- 1 (13 1/2 ounce) can coconut milk
- 1⁄4-1⁄2 teaspoon lime juice (to taste)
