- 4 boneless skinless chicken breast halves
- 1 tablespoon cornstarch
- 2 tablespoons lemon juice
- 2 1⁄2 cups dark sweet cherries, pitted
- 1⁄3 cup flour
- 1⁄2 ground cinnamon
- 1⁄2 ground allspice
- 1⁄2 cup water
- 1⁄4 cup coconut, shredded & toasted
directions
- Stir together cornstarch and lemon juice; stir in cherries.
- Combine flour and spices in a bag; add chicken and shake to coat.
- Brown chicken over medium-high heat in skillet sprayed with nonstick cooking spray.
- Add water, reduce heat; cover and simmer about 20 minutes or until chicken is tender. Remove chicken from pan and cover with foil.
- Remove all but 1 tbsp drippings from pan; add cherry mixture and bring to a boil. Cook until sauce thickens. Place chicken onto serving plates, pour cheery sauce over chicken and top with coconut.

<p>Left to my own devices, I could happily live on appetizers, dim sum, sandwiches and side salads .I gravitate toward a low-fat, clean eating, graze-as-you-go way of life. I am no longer entirely left to myself, as it happens. My partner and my picky teenager each have their different tastes. Quite a challenge.</p>
