Coco Cherry Chicken

  • Stir together cornstarch and lemon juice; stir in cherries.
  • Combine flour and spices in a bag; add chicken and shake to coat.
  • Brown chicken over medium-high heat in skillet sprayed with nonstick cooking spray.
  • Add water, reduce heat; cover and simmer about 20 minutes or until chicken is tender. Remove chicken from pan and cover with foil.
  • Remove all but 1 tbsp drippings from pan; add cherry mixture and bring to a boil. Cook until sauce thickens. Place chicken onto serving plates, pour cheery sauce over chicken and top with coconut.
