Citrus Bulgur Salad With Sunflower Seeds

- 1 medium orange (juiced)
- 1 small lemon (juiced)
- 1 -2 teaspoon liquid honey (or to taste)
- 2 tablespoons olive oil
- 1⁄4 teaspoon salt (to taste)
- 1⁄4 teaspoon pepper (to taste)
- 1 cup bulgur (whole grain)
- 1 1⁄4 cups boiling water
- 1⁄2 cup raisins
- 1⁄2 cup sunflower seeds (dry roasted on a hot frying pan for a few minutes)
- 2 medium carrots (grated)
- 2 stalks celery, finely sliced (medium size)
- 2 teaspoons dried mint
directions
- Place the bulgur wheat in a casserole with lid, add the boiling water, stir with a fork, and leave to soak for 20 minutes until the water has been absorbed (drain the bulgur in a strainer if any water is left).
- In a mixing bowl, whisk together the orange juice,lemon juice, olive oil, honey, salt and pepper, and pour the mixture over the bulgur wheat.
- Add the prepared vegetables, raisins, roasted sunflower seeds, and dried mint, and mix well.

Followed your recipe right no down, but did leave out the dried mint, since I'm not big on that flavor! When you can have this kind of great taste, along with 'healthy' how can anyone complain!
