- 4 medium zucchini, sliced
- 3⁄4 cup instant rice
- 1 lb ground beef
- 1 large onion, diced
- i 10 1/2 oz. can cream of mushroom soup
- 2 cups cottage cheese
- 1⁄2 lb cheddar cheese
- Parboil zuchinni. Brown beef with the onions. Layer in the order listed above in a 9 x 13" pan. Bake at 350 for 45 mn.
This made a great late night one dish meal for us last night. Made in honor of Pammyowl.
Putting it simple.... great dinner.. loved the flavor, and the ingredients, a nice combo, though I personally would prefer a little more rice, but was fine as made. A funny thing when my DS saw me add cottage cheese, and she knew rice was in it, strange looks were happening, but she kept some aside, and is taking to work tommorow. Love to try zucchini recipes during this part of the year. Made for PRMR.
