  • In a medium saucepan, combine sugar, shortening and milk.
  • Bring to a boil.
  • Remove from heat.
  • Add cocoa, salt, vanilla, coconut and oats, mix well together.
  • Drop by tablespoonful onto wax paper lined cookie sheets.
  • Chill and enjoy.

  1. these were really good. My 2.5 year old son who rarely eats sweets or chocolate kept sneaking into the fridge for more!! i found that with the sweetened coconut that i used, it was a little too sweet for dh and I. The second batch i made, i used only one cup of sugar and a extra cup of coconut for a thicker texture. YUMMMY!
     
  2. My daughter really liked these cookies. They were very easy to make. They reminded me of the ones my Mom used to make. If you boil the sugar ect. for longer they will harden faster and not be to soft. I make these almost every week for school lunch treats. I like to use a cookie scoop to make them all the same size. Thanks for the easy recipe that I can make on a moments notice. Mandyj
