Chocolate Mint Brownies

From the "christmas cyclopedia" come thie recipe! the preparemint time & cooking time is a guestiment of mine fyi.

Ingredients:

Serves: 12

Yield: 48.0 brownies

• 1 (22 1/2 ounce) box reduced-fat brownie mix
• 3/4 teaspoon peppermint extract, divided
• 3 tablespoons reduced-fat cream cheese
• 3 tablespoons margarine, melted divided
• 2 cups confectioners' sugar
• 5 -6 drops green food coloring
• 1 tablespoon cocoa
• 1 tablespoon water

Directions:

1. preheat the oven to 350 degrees.coat a 13 by 9 by 2 inch baking pan with nonstick cooking spray.
2. prepare the brownie mix according to package directions,adding 1/4 teaspoon of the peppermint extract. pour the batter into the prepared pan.
3. bake the mix according to the package directions. do not overbake.
4. remove from the oven & cool completly to room temperature.
5. in a mixing bowl,beat together the cream cheese, 1 tablespoon margarine, the confectioners' sugar & 1/2 teaspoon peppermint extract until smooth. add the food coloring whil mixing.spread on the baked brownie layer.
6. in a small bowlo, mix together the remaining 2 tablespoons margarine, cocoa & water.
7. spread the mixture carefully over the cream cheese layer & cool. cut into squares.
