Chili Spiced Bean and Veggie Wraps

- 3 tablespoons extra virgin olive oil
- 2 cups broccoli florets, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small yellow onion, chopped
- 2 large garlic cloves, minced
- 1 tablespoon chili powder
- 1⁄2 teaspoon garlic powder
- 1 (15 ounce) can black beans, rinsed and drained
- 1⁄2 cup low-fat sour cream
- 1⁄2 cup cheddar cheese, shredded
- 2 large flour tortillas
directions
- Heat olive oil.
- Saute broccoli and pepper slices for a little while.
- Add the yellow onion and sauté for a while.
- Add the minced garlic and sauté a little more.
- Add chili powder and garlic powder and stir. (Might want to add more seasoning such as salt and pepper to better suit your taste.).
- Add black beans and stir.
- Remove from heat.
- Add sour cream and stir.
- Add cheddar cheese and stir.
- Wrap final mixture into tortillas.
- enjoy.

Made one change & one addition when preparing these wraps ~ I cut back the chili powder to just 2 teaspoons, & then added 1/4 teaspoon of lemon pepper! All for a good cause, as the finished wraps were very, very satisfying! Something I'd be happy to make again, for sure! Thanks for sharing the recipe!
